Bacon wrapped, stuffed meatloaf sounds decadent. And it is. It’s juicy and easy to make. The kids love this one. If you’re vegetarian, swap the meat ingredients out for your vegetarian/vegan ones. Any leftovers make great next-day sandwiches.
You can make this ahead of time (day or two) and cook it up. It even freezes well to make for another day. Just thaw completely prior to cooking.

Ingredients
- 2 lbs ground beef (or ground pork, lamb, chicken, etc.)
- 1 package thick cut bacon
- 2 large sausages (your choice of regular, mild, spicy, etc.)
- 1 tsp garlic powder
- 1 tsp onion powder or 1 minced onion
- 1/2 tsp pepper
- 1 1/2 tsp Worcestershire sauce
- 1 small can tomato paste
- 1/2 cup grated cheese (again whatever you like/have on hand)
- 3/4 cup seasoned Italian bread crumbs
- 2 large eggs
- Diced Tomato Sauce
- 1 large can diced tomatoes (can be herbed or unseasoned)
- 1/4 c cornstarch
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 2 tsp Italian herb mix
Instructions
- Add all of your ingredients into a bowl together & mix well before adding in your ground beef (or lamb or pork). You can use a spoon or your hands to mix everything together, just make sure it's all really well mixed (several minutes).
- Open the package of bacon and grab your bread loaf pan. Drape the bacon along the long edges of the pan - about half in, half out. Place 1/2 the meat mixture into the loaf pan and place your two sausages lengthwise on top of the mixture. Press the rest of the mixture into the pan on top of/around the sausages. Place the draped bacon strips over the top of the loaf.
- Preheat your oven to 300 F and place meatloaf in the oven for 40 minutes. After 40 minutes, increase temperature to 400 F and cook for 20 minutes more. After that, broil for 5 to 8 minutes to crisp the bacon. When desired crispyness has been achieved, pull from the oven and let rest for 5 minutes.
- Diced Tomato Sauce
- Drain the can of tomatoes and put the liquid into a small pot. Whisking constantly, bring to a simmer with the corn starch, garlic & onion powders. Once the mixture has simmered, add your tomatoes back into it and add the Italian herbs. Slice the meatloaf & serve with rice, potatoes or pasta and spoon the diced tomatoes over the meatloaf and side dish.

We served ours with sliced, pan-fried portobello mushrooms (gills removed) but you could do any vegetable with it.
