What’s better than a Black Forest Cake? How about a Black Forest Trifle.
You get all the flavours of the cake but you don’t need to be a pastry chef to have it turn out. The lovely thing about doing it this way is that it doesn’t take a ton of time and everyone in the family five and up can get involved in the making of it. This one isn’t so much a recipe as it is a set of instructions. You can substitute items to create your own version.
You will need:
- 1 box cake mix (chocolate or white)
- 1 can (540 ml) cherries (or blueberries, apples, peach) pie filling
- 6 cups custard (or vanilla or chocolate pudding)
- 2 cups whipped cream
- 6, 3 cup mason jars (the regular/normal sized ones)
When you cook the cake, you’ll want to pour the batter into a 1″ sheet pan (a cookie sheet with a 1″ side to it) and cook for about 20 minutes (instead of the 25 to 35 suggested). Because it’s a sheet cake, it’ll cook faster. You want it this size and dpth as you want to cut the cake into 1″ squares when you’re ready to put it all together.
When that’s in the oven, you can cook up your custard or make your pudding. For the custard (we like Bird’s), double the custard recipe and add an extra tablespoon of the custard powder so it finishes a little thicker. When it’s done your cake should come out of the oven and set both aside to cool for a couple hours. While the custard cools, remember to whisk it several times so it comes out smooth & creamy.
We like using real whipping cream so we can control the sugar in it. To make enough for this recipe, pick up a 500 ml (1/2 quart) container of the whipping cream and add 1 tbsp of sugar and 1 tsp of vanilla. Whip with stand or hand-mixer until peaks form and become firm.
Once the cake has cooled, gently remove it from the pan (we use the non-stick spray on non-stick pans because they will stick if you don’t – thank Murphy for that one) and cut into 1″ cubes. Grab your mason jars and set up your area where you’re going to do this. Put 4 or 5 cubes of the chocolate cake in the bottom of the mason jar then add a couple tablespoons of the custard or pudding. Top that with a healthy tablespoon of the cherries (or other fruit) and repeat once more. Top with 4 or 5 cubes of cake, add a dollop of whipped cream and sprinkles. Refrigerate for a couple hours before enjoying!
